What makes a white lobster white? The same anomaly that creates an instance of albinism in any organism: the lack of color pigment in the skin. An albino lobster has a melanin deficiency or a total absence of melanin.

It is easy, with a lack of imagination, to see albinism as freakish. But to me albinism is exceptional, remarkable, extraordinary and beautiful in a pure, clean, simple way. That is to say: Pigment? Overrated.
